摘要
冰温技术是一种新型食品贮藏保鲜技术。本文介绍了冰温技术的原理及其在食品贮藏中的研究进展,并指出作为冰温技术延伸的超冰温技术和冰膜贮藏技术未来会有广阔的发展空间。
The ice -temperature technique is a new technology for food storage and preservation. In this paper, the principles and advances of ice - temperature technique of food storage are summarized. There could be much room for development of super - ice - temperature and ice - membrane techniques in the future.
