摘要
沙门氏菌是严重危害人类健康的肠道致病菌,由该菌引起的食物中毒引起世界各国的重视。该菌引起的感染主要通过动物性食品传播,尤其是鸡肉,因此加强鸡肉加工过程中的卫生控制,降低沙门氏菌感染十分重要。此文就沙门氏菌在鸡肉加工过程中的风险分析进行了概述。
Salmonella is a kind of enteric pathogens in the intestines of human, seriously endangering human beings. The food poisoning induced by Salmonella attracted worldwide attention. The infection caused by Salmonella usually spread by animal food, especially chicken. So it's very important to strengthen the sanitation of processed chicken to decrease the infection of Salmonnella" This paper outlines the risk assessment of Salmonella of processed chicken.
