摘要 探讨了采用实时荧光PCR技术检测食品中的致敏原鱼成分。结果表明:采用鱼管家基因16S rRNA基因的特异性检测引物和探针进行检测时,19种样品经实时荧光PCR检测,只有鱼类样品产生阳性荧光信号,其余样品均不产生荧光信号。灵敏度试验结果表明:该方法对致敏原鱼成分的检测灵敏度较高,可达到1 mg/kg,符合痕量检测要求。 The detection of allergen fish components in food by using real-time fluorescence PCR was studied. The experiment results showed that the primers and probe of 16S rRNA gene of fish could specifically identify three kinds of fish with 19 kinds of samples. Sensitivity experiment results showed that 1 mg/kg for fish of food could be detected by using this method and the detection sensitivity was high. This method could meet the demands of trace amount detection.
