摘要
综述了豆渣膳食纤维的提取方法,并评价了各种方法的优缺点;同时全面分析了豆渣膳食纤维的生理功能及其作用机理,而且进一步概述了国内外对豆渣膳食纤维开发应用的状况.
The extraction methods of dietary fiber from soybean dregs were summarized, and the advantages and disadvantages of various methods were evaluated. At the same time, the physical functions of the dietary fiber and its mechanism were also studied. Furthermore, this study had summed up the research advancement about the development and application of dietary fiber from soybean dregs at home and abroad.
