丽水市2007~2008食源性致病菌污染状况分析 被引量:6

Analysis of contamination condition for food-borne pathogens in retailed foods in Lishui from 2007 to 2008

摘要 目的:了解丽水地区居民主要消费食品中食源性致病菌污染状况及分布和高危食品种类。方法:根据GB/T4789-2003对2007年~2008年度丽水地区的3大类共172份食品进行沙门菌、副溶血性弧菌、肠出血性大肠杆菌O157:H7、单核细胞增生性李斯特菌、空肠弯曲菌及金黄色葡萄球菌6种微生物项目的监测。结果:监测的6种食源性致病菌除空肠弯曲菌未检出外,其他5种微生物均有检出。生畜肉中单核细胞增生性李斯特菌和沙门菌的检出率最高,分别为17.78%(8/45)和11.11%(5/45),肠出血性大肠杆菌O157:H7检出率为2.22%(1/45)。动物性水产品中副溶血性弧菌检出率为4.82%(4/83)。即食熟制品金黄色葡萄球菌检出率为25%(5/20)。结论:在丽水地区除生食蔬菜或者蔬菜色拉外均检出沙门菌,并不同程度的检出副溶血性弧菌、肠出血性大肠杆菌O157:H7、单核细胞增生性李斯特菌和金黄色葡萄球菌,其中生畜肉中的微生物污染最为严重,其他类食品也有不同程度的致病菌污染。 Objective:To investigate the occurrence and distributing trends of food - borne pathogens in retailed foods, find out food with high risk. Methods: 172 specimens of 3 category in Lishui during the year of 2007 and 5008 were detected by bacterial culture method of national standards. Results :5 of 7 monitored food -borne pathogens were found. In fresh pork, Listeria monocyto - genes, Salmonella had the mostly high positive rate ( 17. 78% and 11.11% respectively) than other pathogens, E. coli O157 :H7 was 2. 22%. While in aquatic products, Vibro parahaemolyticus was 4. 82%. In cooked products, Staphylococcus aureus was 25%. Conclusion:There is pathogens contamination existing in raw or frozen poultry meat, cooked meat and other food products in Lishui city. Pathogen contamination of foods in Lishui is serious and more attention should be paid to it by relevant departments.
