摘要
牛奶因其营养价值丰富而广泛受到消费者的青睐,但在追求高营养成分含量原料奶的同时,却往往忽略了牛奶的质量问题。本文主要对原料奶污染的途径、保障原料奶的卫生质量、风味质量以及其它质量的安全措施进行详细综述。
Milk is broadly favored by consumers due to the rich nutrition value, but the quality of raw milk oftenwas ignored when seeking the high content of nutritional component in milk. The contaminative approach, the measure of ensuring the sanitary quality, the flavor quality and other quality in raw milk were particularly reviewed in this article.
