摘要 双蛋白发酵乳是以大豆分离蛋白、鲜牛奶为主要原料,经保加利亚乳杆菌和嗜热链球菌发酵而成的一种高蛋白营养保健饮品,具有延年益寿防衰老的保健作用。详细介绍了双蛋白发酵乳的生产工艺,并讨论了影响其稳定性的因素。 Made from soy protein isolate and fresh milk by fermentation with Lactobacillus bulgaricus and Streptococcus thermophilus, double-protein fermented milk is a high-protein nutritional and healthcare drink with life-prolonging and anti-aging effects. In this paper, the production process of double-protein fermented milk is described, and the factors affecting its stability discussed.
