摘要
对登峰街108户个体饮食店卫生调查,发现当前个体饮食业普遍存在流程布局不合理,大部分饮食店无专用食具洗消间,无三级洗消池,食具露空存放,食具抽检合格率低,食品原料处理、食品存放、厨房及辅助场所与餐厅面积配比、食具周转量、食品卫生许可证、从业人员“两证”持证率均存在不同程度问题。本文对其原因进行了分析。
health condition survey on 108 individual restaurants in dengfeng street was carried out.We found that the circuit and overall arrangement of the restaurants was irrational in grneral.In most restaurants,there were no special cleaning & sterilizing room,no threedegree cleaning & sterilizing pool,the dinnersets were kept in the air and the qualified rate of the dinnersets being checked was low.There were many problems existed in disposal of raw material,preservation of food,compatibility between the area of the kitchen and auxiliary space and that of the dinninghall,circulation of dinnersets,percentage of keeping two licenses.i.e.food hygiene license and health license,and so on.We analyzed the reasons of the problems and gave some advises about health management of individual restaurants.
