摘要
随着社会的发展和生活水平的提高,食品保鲜技术越来越受到关注,采用先进的保鲜设备、将安全无毒的天然防腐剂应用到食品中已得到了较好的效果。概述生物防腐剂的种类、气调保鲜的原理和应用,并介绍生物防腐和气调保鲜协同作用在食品中的应用。
With the devolopment of society and improvemnet of life level ,food fresh-keeping technology was paid more attention. Effect was obtained using advanced fresh-keeping equipment or safe biological preservatives added to the food. The kinds of biological preservatives, the mechanism and application of MAP (modified atmosphere packaging) were summarized. Coorporation of biological preservatives and MAP in food was also introduced.
