摘要 探讨农村自制烟熏腊肉的质量安全性,采用GB检测手段对不同来源腊肉亚硝酸盐含量及脂肪酸价、过氧化值进行检测,同时,将腊肉饲喂小鼠,连喂4周,每周采血,检测GLU(血糖)、ALT(谷丙转氨酶)、ALP(碱性磷酸酶)其12项血清生化值。结果显示:农家自制新鲜腊肉中亚硝酸盐残留量及脂肪过氧化值未超标,但长期存放者则严重超标;饲喂不同来源腊肉的小鼠生化值差别不显著,但其ALP、DB(直接胆红素)、TB(总胆红素)值与对照组差异显著。结论:农村自制的存在着一定的不安全隐患,不宜长期大量食用。 For approaching quality security of bacon self-made by farmer, the research applied GB test facility to test the nitrite content, the acid value, peroxide value of different bacons; meanwhile, using bacon to feed mouse for four weeks, and then test the GLU (glucose); ALT (alanine transaminase); ALP (alkaline phosphatase) 12 biochemical index of the blood of mice with all automatic biochemistry analyzer. The results showed that the related index of fat and nitrite did not express GB, but some biochemical indexes, such as ALP, DB (direct bilirubin), TB (total bilirubin), existed significant difference comparing with the contrast or normal index. Conclusion: the bacons self-made by traditional method presented some unsafely facts, which was inadvisable to eat for long-time.
