摘要
综述了胶原蛋白的提取方法,阐述了提取条件对胶原蛋白结构的影响,探讨了不同胶原蛋白的结构与性质之间的关系。
It was reviewed that different extraction methods such as acid process, alkaline process,enzyme process and combination process for obtaining collagen. The extraction factors influencing the collagen structure and the relationship between collagen structure and its properties were also discussed.
