摘要
目的研究半夏曲的最佳发酵处方。方法以半夏曲的淀粉酶活力、蛋白酶活力和小肠推动率为评价指标,用单因素方差和秩和检验进行分析,研究半夏曲的处方。结果80 g清半夏、80 g法半夏、5 g六神曲原料、10 g白矾、20 g生姜汁、32 g面粉为半夏曲最佳的发酵处方。结论该方工艺简单、经济、可操作性强。
OBJECTIVE To study the best fermentation prescription of Banxiaqu.METHODS Diastatic activity,protease activity,intestine impulse rate were determined and the data were analysed using one-factor analysis of variance and rank sum test,to evaluate the prescription of Banxiaqu.RESULTS The best prescription consists of Qingbanxia(80 g),Fabanxia(80 g),materials of liushen qu(5 g),alumbre(10 g),ginger juice(20 g),flour(32 g).CONCLUSION This prescription is streamlining,economical and feasible.
