Nitrite poisoning is one of common food poisoning, and it causes very serious toxicological effects on human health. The paper comprehensively summarizes the risk of nitrite from four aspects, that is, hazard identification, hazard description, exposure assessment and risk description. And the suggestions for risk management were put forward.
