茶树内生真菌H8产红色色素理化性质研究 被引量:2

摘要 对茶树内生真菌H8菌株红色色素的性质及稳定性进行了研究.结果表明,此色素易溶于水、乙酸乙酯,可溶于甲醇、氯仿,微溶于丙酮、乙醇.其水溶液最大吸收峰在470 nm,在酸性条件下较稳定,在碱性条件下易分解且色泽会转为紫红色;Al3+,Fe3+与Cu2+对此红色色素有较大影响,Na+,Mg2+,K+,Zn2+,Pb2+等金属离子对其稳定性影响不大;灯光、紫外线、室内自然光照射及加热条件下稳定;在日光及氧化还原条件下易分解;蔗糖对其稳定性影响较大,柠檬酸、柠檬酸钠等食品添加剂的影响较小. The properties and the stability of the natural red pigments from the tea endophytic fungus H8 were studied. The results showed that the pigment was easy to be dissolved in water and ethyl acetate. It was also soluble in carbinol and chloroform, but slightly in acetone and ethanol. The absorption peak of the pigment in water was at 470 nm. The red pigment was affected significantly by Al^3+ , Fe^3+ and Cu^2+ , and slightly by Na^+ , Mg^2+ , K^+ , Zn^2+ , Pb^2+ ; it is resisitant to lamp light, ultraviolet, natural light in room and heat, but liable to degrade under sunlight and redox condition; its stability was affected obviously by sucrose, but slightly by food additives, such as citric acid and sodium citrate.
