摘要 以反相离子对色谱法(RP-IPC)分析测定14种不同啤酒的嘌呤含量,利用数据分析软件SPSS分析嘌呤含量与啤酒常规指标的相关性。结果显示,14种啤酒,总游离态嘌呤含量在7.1143-24.9308mg/L,总嘌呤含量在28.6492-79.3544mg/L;4种游离态嘌呤(腺嘌呤、鸟嘌呤、次黄嘌呤和黄嘌呤)以黄嘌呤含量最高,总游离嘌呤含量与酒精极显著相关,相关系数r=0.810,P<0.01,与原浓极显著相关,相关系数r=0.765,P<0.01,与色度显著相关,相关系数r=0.657,P<0.05,与真浓显著相关,相关系数r=0.589,P<0.05,与总酸显著相关,相关系数r=0.573,P<0.05;啤酒中总嘌呤,以鸟嘌呤含量最高,总嘌呤类物质含量与各指标没有相关性。 This study aims to explore the purine (free bases and bound)contents in different beers and analysis the relevance to the routine index. Contents of purine in 14 types of beer were detected by reverse-phase ion pair chromatography (PR-IPC). The relevance between purine contents and routine index of beer was analysis by data analysis software spss. The results showed that the contents of free purine bases are between 7.114 3 mg/L and 24. 930 8 mg/L; the total contents of purine are between 28. 649 2 mg/L and 79. 354 4 mg/L. Xanthine had the highest level among the four purine bases (Adenine, Guanine, Hypoxanthine, Xanthine). There are very significant correlations between the total purine bases and original extract, alcohol, and the correlation coefficient was 0. 810 (P 〈 0.01 ) , 0. 765 (P 〈 0.01 ) respectively. There are significant correlations between the total purine bases and chroma, real attenuation, total acid, and the correlation coefficient was 0. 657 ( P 〈 0.05), 0. 589 ( P 〈 0. 05), 0. 573 (P 〈 0.05) respectively. Guanine had the highest level after the beer hydrolyzed with perchloric acid, and there was no relevance between total purine contents and routine index of beer.
