对怀山药零余子的营养成分进行了分析和评价,主要对其一般营养成分、氨酸酸组成及矿质元素含量进行了检测和营养学评价。分析结果显示,碳水化合物和蛋白质是怀山药零余子的主要成分,其中多糖占0.66%,蛋白质占4.61%,必需氨基酸丰富,占氨基酸总量的34.9%,氨基酸评分57.1,第一限制氨基酸为蛋氨酸和胱氨酸;游离氨基酸中牛磺酸的含量高达15.7mg/100g,占游离氨基酸总量的3.68%;脂肪含量为0.27%;矿质元素含量丰富,尤其是铁含量高。因此,怀山药零余子是高蛋白、低脂肪,且富含铁、铜、锌、锰等微量矿质元素的天然理想保健食品原料。
