中性蛋白酶水解鸡全蛋清制备活性肽工艺条件优化 被引量:12

Optimization for hydrolyzing conditions of bioactive peptide from chicken albumen with neutral protease

摘要 以新鲜鸡全蛋清为原料,利用中性蛋白酶水解法制备活性多肽,并对影响中性蛋白酶水解过程的各个因素进行研究。通过测定蛋清酶解液氨基态氮含量,确定中性蛋白酶水解蛋清制备活性多肽的适宜条件为pH为8.0、酶解温度为50℃、加酶量为1.40%、底物浓度为70%、水解时间5h,在此水解条件下,酶解液氨基态氮含量达到1251.86mg/kg。 The process of preparing of bioactive peptide from chicken albumen by neutral protease was studied. The factors of affecting process of hydrolysis were investigated. By determining the amino nitrogen content of enzymolysis liquid, it could be concluded that the best conditions for the hydrolysis of chicken albumen were: substrate pH8.0, hydrolyzing temperature 50 ℃, ratio of neutral protease 1.40%, concentration of substrate 70% and total hydrolysis time 5 h. Under these conditions, the amino nitrogen content of enzymolysis liquid could reach 1251.86 mg/kg.
