摘要
目的:建立以HACCP体系为基础的科学监管模式,保障重大国际活动期间国境口岸食品卫生安全。方法:通过分析现有食品卫生监管模式以及餐饮企业HACCP体系运行现状,结合奥运会餐饮服务总目标,提出"政府+企业+消费者+认证机构"的四方科学监管模式,并选取示范餐饮企业,验证科学监管模式的有效性。结果:科学监管模式显著改善了示范餐饮企业的食品卫生水平,有效保障了奥运会场馆餐食的卫生安全。结论:科学监管模式应在重大国际活动国境口岸餐饮卫生保障工作中进行推广。
Objective: To establish the scientific supervision mode on the basis of HACCP system, ensure the port food safety during the important international events. Methods: Through the analyzing the exiting food hygiene supervision mode and the function actuality of HACCP system in catering sector, the four-side scientific supervision mode was established, and choose two demonstration companies to validate the scientific supervision mode. Results: The scientific supervision mode improved the food hygiene level of two demonstration companies, and ensured the food safety during Olympic Games. Conclusion: The scientific supervision mode should be generalized to ensure the port food safety during the important international events.
