O-肉桂酰低分子量κ-卡拉胶的合成及抗氧化活性 被引量:1

Synthesis and Antioxidant Activity of O-cinnamoyl Low-Molecular-Weight κ-carrageenan

摘要 对κ-卡拉胶进行盐酸降解得到低分子量κ-卡拉胶,与肉桂酰氯进行酰化反应,制得O-肉桂酰低分子量κ-卡拉胶.FT-IR、UV、1H NMR及13C NMR分析表明,肉桂酰基接枝到了低分子量κ-卡拉胶的分子链上.体外抗氧化性能测试结果表明,酰化产物对羟自由基和超氧阴离子自由基的清除能力明显提高. Low-molecular-weight κ-carrageenan was achieved through mild hydrochloric acid hydrolysis of κ-carrageenan, and then was acylated with cinnamoyl chloride to obtain O-cinnamoyl low-molecular-weight κ-carrageenan. Analysis of FT-IR, UV, 1H and 13C NMR spectroscopy showed that cinnamoyl group was grafted onto the chain of lowmolecular-weight κ-carrageenan. The antioxidant activity was tested by the scavenging of hydroxyl and superoxide anion radical. The results showed that the scavenging abilities of the acylated product were apparently improved.
