淀粉酶和糖化酶体外降解玉米淀粉的机理探讨 被引量:3

摘要 本文采用淀粉酶、糖化酶的单酶及其复合酶进行玉米淀粉水解的试验。研究发现,淀粉酶、糖化酶分别在模拟畜禽小肠和胃内pH条件下表现出较好的酶活力;在酶单位添加量相同的条件下,淀粉酶的水解效率优于糖化酶;在pH4.6时淀粉酶与糖化酶的水解互作效应优于添加酶量相同的单一淀粉酶,低于单一糖化酶;在pH6.0时淀粉酶与糖化酶的水解互作效应优于添加酶量相同的单一糖化酶,低于单一淀粉酶。 The experiment was conducted to study the effects of amylase and glucoamylase on hydrolysis of cornstarch in both single and mixed enzymes conditions.The results showed that amylase and glucoamylase could keep the enzyme activity in the simulated small intestine and stomach under proper pH.After adding the same amount of enzymes, the hydrolysis efficiency of amylase was better than glucoamylase.The hydrolysis effect of amylase and glucoamylase interaction was better than single amylase,but worse than single glucoamylase under pH 4.6.However it was better than single glucomylase but worse than single amylase under pH 6.0.
