Empirical Analysis of Food Consumption in Urban Shanghai

摘要 随着居民收入水平的提高,物价不断上涨,特别是肉制品、粮食和蔬菜等农产品价格的节节攀升,对低收入居民的生活产生了极大的冲击。对1995-2007年间上海城镇居民消费数据,利用恩格尔系数、收入需求弹性和扩展线性支出系统模型等方法进行分析,结果表明:上海市绝大部分家庭都能够解决基本的食品消费需求,并且在食品结构上保持着传统的消费习惯,但随着收入增加,居民对消费的需求仍然有一定的潜力。应该选择积极的对策进一步引导和扩大消费。 In recent years, the increasing of price along with the income level caused a constant price increase in meat, food, and vegetables, thus there was a certain impact on the lives of low-income residencies. The paper analyzed the data of food consumption of residencies in Shanghai from 1995- 2007 using the methods of Engel~ s coefficient, the income elasticity of demand, and the ELES Model. The results showed that most families in Shanghai could settle up the basic needs of food consumption, and kept the traditional consumption habits of food structure. Along with income increasing, there was still some potential for the consumption demand of the residencies. The positive methods to guide and expand the consumption should be selected.
