摘要
目的对重庆市万州区2007年生产加工的蒸馏酒进行卫生质量监测,以了解本产地蒸馏酒卫生质量现状及影响因素,为确定卫生监测重点和国家制定食品卫生标准提供科学依据。方法严格按照国家《全国疾病预防控制机构工作规范》要求和现行《蒸馏酒与配制酒卫生标准》进行采样、检验和评价。结果万州区蒸馏酒的监测结果总合格率为78.95%,以杂醇油超标较为突出,超标率为17.11%;甲醇指标监测超标率为3.95%,氰化物、铅、锰监测合格率均为100%;区级酒厂蒸馏酒监测合格率为88.89%,乡镇企业酒厂蒸馏酒监测合格率为75.86%。结论该区蒸馏酒卫生质量合格率较低,杂醇油超标的是蒸馏酒不合格的主要原因。
Objective To conduct surveillance on the hygiene quality of distilled spirit processed in Wanzhou in 2007 and related factor, provide basis for determination of hygiene surveillance priority and the development of national food hygiene standard. Methods Samples were collected, tested and evaluated according to the requirement strictly. Results The overall qualified rate of distilled spirit in Wanzhou was 78. 95%, but the indicator of fusel oil exceed the limit (17. 11% ). The excess rate of methanol was 3.95%, the excess rates of cyanide, lead, manganese were 100% ; The hygiene qualified rate of distilled spirit processed in breweries at prefecture level was 88. 89%, but that in the township breweries was 75. 86%. Conclusion The hygiene qualified rate of distilled spirit in Wanzhou was low, which was mainly caused by excess of fusel oil.
