摘要
初步探讨了乳蛋白质酶水解特性,得出了最佳酶及酶解条件:乳蛋白质在pH值8、温度40℃条件下加入6000U/g胰蛋白酶,水解时间120min,乳蛋白质水解的效果最好。另外,双酶分段水解比单一胰蛋白酶的水解效果好,以木瓜蛋白酶+胰蛋白酶水解效果为佳。
The properties of the enzymatic hydrolysis of milk protein are discussed.The optimum conditions were:pH 8.0,temperature 40℃,6000u/mg (protein) trypsion and hydrolysis time 120min.And the effect of hydrolysis with double enzymes was better than that with single enzyme.The double enzymes were papin and trypsion.
