摘要
研究了芦蒿干制品的加工工艺及其加工中的护色技术。通过对芦蒿干制品品质的考虑,得出了芦蒿加工中的最佳烫漂和护色条件:用100 mg/kg ZnSO4护色液于100℃条件下烫漂120 s。从加工成本和产品品质综合考虑,烫漂和护色工艺推荐为75 mg/kg ZnSO4护色液于100℃条件下烫漂90 s。干制温度选择85℃时芦蒿干制品的品质最佳,且最为经济。
The conditions of drying Artemisia selengenses Turcz and its color- protecting technique during drying were studied in this paper. The results showed that the best drying and color - protecting conditions were 120 seconds at 100 ℃ with 100 mg/kg ZnSO4, but the suitable processing conditions were 90 seconds at 100 ℃ with 75 mg/kg ZnSO4. The optimum temperature for drying Artemisia selengenses was 85 ℃.
