荷兰黄瓜强制通风预冷试验研究 被引量:1

摘要 预冷后的果蔬货架期明显延长,其鲜度与营养成分能得到最大限度的保持。通过设置不同的操作参数对荷兰黄瓜进行强制通风预冷研究,试验结果表明:冷却速率随着风速的增加而增大,大致成幂函数关系;冷空气及黄瓜的初温与黄瓜的终了温度呈线性关系;黄瓜同一横截面上不同半径处存在温度梯度,预冷过程起始及终了时,温度梯度很小。 Experiments on the forced-air pre-cooling of apples were carried out according to different operation parameters. Relation between precooling rapidity and air velocity is described by power fuction. While initial temperature of cold air and cucumbers is linear with last temperature of cucumbers. Temperature gradient lies at different radius position in the same cross section, but it is small at initial time and the last.
