摘要
本实验对香菇除异味方法进行了探讨,研制出适合于儿童口味,有利于儿童生长发育的香菇儿童营养肠,并对其营养成份进行了分析。结果表明:以植物油除香菇异味效果最佳,用热分解法除异味时,其余味具有苦味。营养肠中香菇添加量以5%~10%为佳,添加过多使口味变腻、色泽变褐、弹性下降。此营养肠营养丰富,具有高纤维、高钙、高锌、高磷、高铁、脂肪含量低、香味浓郁持久等特点。
