依杜兰类香料合成的研究进展

Research Progress on Synthesis of Edulans

依杜兰类香料具有独特的优雅的香气,被认为是西番莲的关键香气成分,在食品、化妆品、饮料、卷烟等香气成分中被广泛发现。国外不少学者就依杜兰香料的合成开展了制备方法的研究,但国内尚未有此方面的研究报道。文中综述了依杜兰类香料的合成研究现状,主要讨论了依杜兰类香料合成的反应原理及一般合成方法,并对未来的发展提出了一些建议。

Edulans, which have intense pleasant and unique note, are widely found in the volatile components of food, cosmet- ics, tobacco, etc. And edulans are also regarded as important aroma of purple skinned Passiflora edulis. Some studies on the synthesis of edulans have been reported. In this paper, the status of synthesis of edulans used as an important flavoring was reviewed with 22 references. Some reactions and general ways of synthesis were discussed. Some suggestions for the continuous research and the developmental prospect in future are also discussed.
