摘要
介绍了环糊精的特性及包合物的形成机理。综述了改性水溶性环糊精衍生物的制备方法和环糊精在食品工业中的用途以及2-羟丙基-β-环糊精在食品工业中的一些应用前景。
Characteristics of cyclodextrins and form of inclusion complex are introduced . Methods of preparation water soluble derivatives by modified and applications of cyclodextrin in food industry are reviewed as well as prospects of 2 hydroxypropyl β cyclodexdrin in food industry are also pointed out .
