摘要
研究了高电压脉冲电场技术对从苹果渣中提取果胶的影响。对榨汁后所得的苹果渣,通过电场进行预处理,研究了电场强度、pH值、脉冲数、料液比和温度5个因素对果胶提取率的影响。结果表明:当电场强度为15kV/cm、脉冲数为10、pH值为3、料液比1:19、温度为62℃时,苹果渣果胶得率为14.21%。
This paper works for research influence on extraction of pectin from apple residue by high intensity pulsed electric fields.The apple residue after pressing is dealed with high intensity pulsed electric fields.The influence regularity of extraction of pectin was investigated.The parameters are electric field intensity,pulse number,pH,stuff and liquid ratio and temperature.The results indicate that field intensity 15kV/cm,pulse number 10,pH 3,and stuff and liquid ratio1:19,temperature 62℃,and the yield of pectin was 14.12%.
