摘要
概述了近年来有关蔬菜硝酸盐积累方面的研究，包括积累机制及影响因素，提出相应的调节措施，并就当前存在问题指出今后的研究重点。
A review on researches on nitrate accumulation in vegetables in the recent years,including the mechanism of accumulation and its influenced factors.The control measures,the problems in the current research and the key points in their further research have been pointed out.
