臭氧处理对月柿柿饼真菌抑制效果的影响 被引量:9

摘要 以恭城月柿柿饼为试材,研究其致病菌种类以及不同臭氧处理方式对柿饼易污染真菌的影响。试验结果表明,月柿柿饼易污染真菌种类为酵母菌和青霉;随着臭氧处理时间的延长,对柿饼易污染真菌杀灭作用也增强;臭氧杀灭柿饼上青霉的作用强于酵母菌;臭氧对4℃环境中存放柿饼的真菌抑制效果好于(20±3)℃,(30±3)℃。 The trail using Gongcheng dried persimmon as material. The effects of different ozone treatments on easy polluted fungi of dried persimmon and its pathogens species were studied. The results showed that, easy polluted fungi of dried persimmon were penicilliun and microzyme. The effects of killing fungi,which can easily polluted dried persimmon could enhance with the processing time of ozone increasing. The effects of killing penicilliun are stronger than microzyme. The effects of constrainment on fungi dried persimmon treated by ozone and stored in 4℃ was better than (20±3)℃ and (30±3)℃
