摘要 以Novo435脂肪酶作为生物催化剂,叔丁醇作为反应溶剂,酶促葡萄糖与4种低级脂肪酸(异戊酸、正己酸、正辛酸、月桂酸)分别合成相应的脂肪酸葡萄糖酯。反应产物经电喷雾一级质谱(ESI-MS)和高效液相色谱电喷雾质谱联用(HPLC/ESI-MS)分析表明:低级脂肪酸均可以与葡萄糖发生酯化反应,产物以葡萄糖酯单酯为主。低级脂肪酸葡萄糖酯的热裂解产物多为醛、酮、酸、酯类等小分子挥发性香味化合物。产物的烟草加香应用能显著提高卷烟的香气量,明显减少卷烟的杂气,改善烟气细腻柔和度。 Using Novo435 lipase as catalysis and tert-butanol as medium, four glucose fatty acid esters were directly synthesized from glucose and iso-pentanoic acid, n-hexanoic acid, n-octanoic acid, and lauric acid separately. White powder products were prepared after vacuum distillation and purification. These products were identified qualitatively by HPLC/MS. Resuits showed that the products were dominated with monoesters, and only a small amount of diesters presented. In addition, pyrolysis products of sugar fatty acid esters were studied by Py/GC/MS, and functions of identified degradation were briefly discussed. The applications of sugar fatty esters in cigarette were evaluated by an expert panel, and the glucose fatty acid esters can improve cigarette flavor with improvedr smoothness and less irritancy.
