摘要
采用Osborne蛋白质分离法分级提取荞麦中的清蛋白、球蛋白和谷蛋白,并对其清除羟自由基、超氧自由基的能力进行测定。结果表明,荞麦清蛋白具有很强的清除羟自由基、超氧自由基的能力,其IC50分别为0.474g/L和0.436g/L;荞麦球蛋白只对羟自由基具有清除作用,其IC50为2.19g/L;而荞麦谷蛋白则对两种自由基均无清除效果。
Albumin globuhn and glutehn oi common buckwheat extracted by Osborne method, then studied the scavenging effects of them on hydroxyl free radical and superoxidant radical.The experiment shows that the albumin possess powerful effect on scavenging hydroxyl free radical and superoxidant radical. The IC50 value are 0.474 g/L and 0.436 g/L. Globulin only possess effect on scavenging hydroxyl free radical,its IC50 value is 2.19 g/L, glutelin doesn't possess effect on scavenging those two radicals.
