摘要
番茄红素在预防人类某些癌症和其他疾病的发生方面起着重要的作用,作为一种功能性天然色素,是目前国际上功能食品成分研究中的一个热点。综述了番茄红素的清除自由基、抗氧化、预防癌症和心血管疾病、增强免疫力、对生殖系统的作用,并探讨了它的应用前景。
Lycopene, amajor carotenoid, is considered the new favorite ofhealth product in the 21 st century. Ithas a lotofhealth function such as precaution and treatmentofcancer, protection of car-- diovascular function, impacton human procreate system, raising immunity, prevention from hyperglyce--mia, postponement aging and safeguard skin, so was a hot topic of the research on ingredients of thefunctional food nowadays. Based on domestic and overseas concerned literatures, this article reviews theresearch developmentof lycopene including history and status quo,physico-ehemicalproperties, the bio--logical characteristic, the health function and pharmaeeuties studies, aswell as the potential application.
