The aim of this study was to improve the solubility of quercetin in aqueous solution. The inclusion compound of quercetin with β cyclodextrin was obtained by saturated aqueous solution method. The formation of the inclusion compound was confirmed by IR spectroscopy and differential scanning calorimetry. The content of quercetin inclusion was determined by UV. The results indicated that the inclusion compound of quercetin with β cyclodextrin was formed. The dissolubility of quercetin in inclusion form increased from 2.78 μg/mL to 23.15 μg/mL. The experimental data of inclusion compound fitted well to the molar ratio of 1∶1. Through the thermodynamic study we got the constants and Δ r H 0 m, Δ r S 0 m, Δ r G 0 m of the inclusion at different temperatures.
