摘要
分别从山西汾酒厂、四川泸州酒厂、贵州省茅台镇五星酒厂等企业采集大曲样20个,酒醅样15个,从中分离、筛选出6株优良的细菌和5株发酵力较强的酵母菌,经制曲发酵产酒试验后经气相色谱对新酒成分分析,除乙酸乙酯较对照组低200mg/100mL,其余指标基本相近。
Collect 20 Daqu starter samples and 15 fermented grains samples from Shanxi Fenjiu Liquor Distillery, Sichuan Luzhou Liquor Distillery and Wuxing Distillery of Maotai town, and isolation, screening 6 fine bacterias and 5 excellent yeasts, after ferment experiments, analyze the components of the liquor by gas chromatography, it's close to the finished product, except ethyl acetate (200 mg/100 mL lower than finished product).
