枝江大曲酒以"窖香曲香最秀雅"而驰名天下,通过对原料、水、设备、糖化发酵剂以及生产工艺的研究,总结了形成枝江大曲酒风格的成因。
Zhijiang Daqu Liquor is famous for its exquiste aroma and enjoyable taste. The formation causes of Zhijiang Daqu Liquor styles were summarized in this paper through the analysis of raw materials, water, equipments, saccharifying ferment and the production techniques.
