摘要 研究测定了鲁农Ⅰ号配套系商品猪的胴体性能及肉品质。屠宰体质量97.69 kg、胴体瘦肉率58.39%、肉色3.19、大理石纹3.38、肌内脂肪4.01%。每100 g背最长肌中氨基酸总量、鲜味氨基酸含量和必需氨基酸含量分别为22.21、17.6217和8.5550 g,鲜味氨基酸、必需氨基酸分别占总氨基酸的79.34%和38.52%。背最长肌饱和脂肪酸(SFA)含量、饱和脂肪酸和单不饱和脂肪酸含量(SFA+MUFA)和不饱和脂肪酸(UFA)含量分别为40.53%、90.64%和59.31%。 The carcass performance and meat qualities of Lunong synthetic Line No. I finishing pigs were studied. The slaughter weight was 97.69kg, the lean meat percentage 58.39%, meat color score 3.19, marbling score3.38, IMF is 4.01%. The 100g longissimus muscle amino acid content,DAA and EAA were 22. 2100g, 17. 6217g and 8. 5550g. DAA/TAA and EAA/TAA were 79. 3436% and 38. 5182%. Longissimus muscle SFA content, SFA+MUFA and UFA were 40. 53%, 90. 64% and 59.31%.
