摘要
目的采用含气调理食品加工新技术,研制软罐头新品种和组合包装形式,提高食品的可接受性和使用的方便性。方法建立含气调理食品加工实验室,制定软罐头新产品工艺配方、杀菌公式并进行试制,对软罐头材料(ET/BOPA/AL/CPP)进行评价。结果试制了60个新品种,组成6人一餐份组合式包装,共10个食谱;软罐头材料的指标达到设计要求。结论软罐头新品种和6人一餐份组合包装营养构成合理,可接受性好,使用方便。
Objective To develop new type of food in retort pouches and unified packaging with the application of air-conditioned food processing technique, so as to increase acceptability and convenience of food supply at sea. Methods First, a laboratory of air-conditioned food processing technique was established, formulas and pasteurization methods for various retort pouches were designed, 60 kinds of new food in retort pouches were trial-produced with the new production techniques, and the retort pouch materials (ET/BOPA/AL/ CPP)were assessed for their suitability. Results Overall, 60 kinds of new style food in retort pouches were developed and 10 recipes in retort pouches with assorted packaging for 6 persons at a time were finally made. The materials used for retort pouches could satisfy the design criteria. Conclusions The 60 kinds of new style food and the assorted packaging for 6 persons at a time were rational. The acceptability and convenience of food proved to be ideal.
