摘要
通过对枝江大曲酒春季和夏季酿造用大曲和出窖的窖泥中微生物区系的分析,找出枝江大曲酒的优势菌,对其进行了初步鉴定,从而找出影响枝江大曲酒的微生物类群。
Through Zhijiang Daqu liquor microflora analysis of Daqu and mud pit in the spring and summer to find out the dominsnt microbe of Zhijiang Daqu Liquor,carried out its preliminary identification in order to find out the effect microorganism goups of Zhijiang Daqu Liquor.
