摘要 评价了枯草芽胞杆菌Bacillus Subtilis B1发酵大豆的血管紧张素转换酶(ACE)抑制活性,并与纳豆菌Bacillus Subtilis natto进行了比较。发酵过程中,B.SubtilisB1发酵大豆表现出更高的ACE抑制活性,但其蛋白酶活性及游离氨基含量低于B.Subtilis natto发酵大豆。B.Subtilis B1发酵24h样品的IC50值为0.0901mg/mL,通过Sephadex G-25凝胶层析后所得活性最强的组分的ACE抑制率为71.8%。B.Subtilis B1可以成为一种开发具有潜在降血压功能的发酵食品的菌株。 In this work, angiotensin I-converting enzyme (ACE) inhibitory activities of fermented soybeans started with Bacillus Subtilis B1 were investigated and compared with that started with Bacillus Subtilis natto. During fermentation, samples fermented by B. Subtilis B1 showed higher ACE inhibitory activities with lower protease activities and less amounts of free amino groups than that fermented by B. Subtilis natto. The 24 h fermented sample started by B. Subtilis B1 possessed an IC50 value of 0.0901 mg/mL, and the highest ACE inhibitory activity was 71.8% for a fraction separated by a Sephadex G-25 column. Results indicated that B. Subtilis B1 could be utilized as inoculant to prepare fermented soybeans with potential blood pressure-lowering properties.
