摘要
对栝楼果实的皮、籽、瓤3部分进行营养成分分析。研究表明,栝楼果实富含脂类、蛋白质、矿物质、维生素、多酚和黄酮等多种营养成分,籽中粗脂肪、蛋白质和Fe、Cu、Zn等微量元素含量均最高,为25.00%、9.46%和73.19、7.65、42.48μg/g;栝楼果实含有较多的Vc,皮、籽、瓤的含量分别为95.92、29.45、15.45μg/g;皮中多酚类和黄酮类含量最高,分别为8.76mg/g和3.99mg/g。针对栝楼果实的营养特点,可以进行不同产品的开发。
The main nutrient components among the pericarpium, seeds and pulps in fruit of Trichosanthes kirilowii Maxim were analyzed. The result showed that fruits were rich in lipids, protein, minerals, vitamins, polyphenol, flavonoids. In the seeds, the content of crude fat, protein, Fe, Cu, Zn and other trace elements were the highest, which were 25.00%, 9.46%, 73.19 ug/g, 7.65 ug/g and 42.48 ug/g respectively. Fruits were also rich in Vc, the content of which were 95.92 ug/g, 29.45 ug/g and 15.45 ug/g in pericarpium, seeds and pulps respectively. The contents of polyphenol and flavonoid were highest in pericarpium, which were 8.76 mg/ g and 3.99 mg/g respectively. According to the nutritional feature in fruit of Trichosanthes kidlowii Maxim, we may develop different products.
