摘要
以糯玉米为主要原料,经酶解后与原料乳混合,经双歧杆菌及其他乳酸菌混合发酵后,调配成发酵乳饮料,通过各项实验确定出最佳工艺条件及配方。
In the article, waxy maize as the main raw material, it was enzymatic hydrolysis and mixed with raw milk. Then it was fermented by Bifidobacterium and other lactic acid bacteria. A kind of milk drink with some special many ways of experiments are tried in order to determine the best formulation and craft condition.
