摘要
由于传统猪头肉油脂析出较多,使很多人望而却步,加之传统猪头肉常采用柜台无包装冷鲜销售,贮藏、运输和携带上极不方便,满足不了消费者将猪头肉作为一种旅游、便携的理想食品的需要。因此本文详细介绍了脱脂猪头肉软罐头的加工工艺,使猪头肉产品适合方便化、营养均衡化的需要。
Because the traditional pig head has much grease, it makes many people flinch. In addition, it is inconvenient to store, transport or carry for the pig head used to sell cold fresh without packaging, which can't meet the consumers' requirements. In this paper the processing technology of soft canned degreasing pig head was introduced in detail to make the products fit the convenient and balanced nutrient requirements.
