深圳市福田区市售糕点类食品的卫生状况 被引量:1

Hygienic Status of Cakes in Futian District of Shenzhen City

摘要 目的了解深圳市福田区市售糕点类食品卫生状况。方法抽取深圳市福田区糕点类食品制售企业56家进行现场卫生学调查,同时,现场随机抽取103份糕点类食品样品进行检验。结果糕点制售企业布局合理率为78.6%;原辅料索证率为12.5%;称量设备使用率为28.6%;从业人员膨化剂卫生知识知晓率为35.2%。所有糕点样品微生物检测项目均合格,不合格项目为铝。铝含量合格率为28.2%,铝含量平均检测值为227.1mg/kg,最高值1226.0mg/kg。西式糕点铝含量合格率显著高于中式点心;定型包装糕点铝含量的合格率显著高于散装糕点;不同生产(或销售)单位的糕点铝含量合格率有非常显著差异。结论深圳市福田区糕点类食品铝含量超标情况相当严重,应积极采取有效的干预措施。 [ Objective ] To understand the hygienic status of cakes in Futian District of Shenzhen City. [ Methods ] Totally 56 cakes manufacturing and selling enterprises in Futian District of Shenzhen City were selected to perform field hygienic investigation, meanwhile, 103 cake samples were randomly selected and examined. [ Results] The rational distribution rate of the cake enterprises was 78.6%. The rate of asking for certificates of raw and adjuvant material was 12.5%. The utilization rate of weigh apparatus was 28. 6% ; the awareness rate of hygienic knowledge about leavening agents in employees was 35.2%. The microorganism items of all cake samples were qualified. The unqualified item was aluminium. Aluminium qualified rate of cake samples was 28.2%. The average value of aluminium was 227.1 mg/kg, and the maximum was 1226.0 mg/kg. The qualified rate of aluminium of Western-style cake was higher than that of Chinese-style cake. The qualified rate of aluminium of packaging cake was higher than that of the cake in bulk. The difference of aluminium qualified rate between different production or sales enterprises was significant. [ Conclusion] The status of aluminium content overproof of cake is serious in Futian District of Shenzhen City, it is necessary to take effective control measures.
