摘要
为掌握我国市售大米贮存期间的品质变化规律及其安全性综合分析和评价方法,采用实验室贮藏抽样检测的方法对东北成品包装大米的生化和物理指标变化规律进行了分析。结果表明,农药残留、重金属、甲苯残留和黄曲霉毒素B1在成品包装大米的整个贮藏阶段均未检测到,而脂肪酸值和还原糖值随贮藏时间显著上升,脂肪酸值虽呈增加趋势,但低于国家标准,黏度随贮藏时间延长缓慢降低。
In order to master the quality change rule of packaged rice sold in markets during storage period as well as comprehensive analysis of safety and evaluation methods, the quality change rule of packaged rice sold in markets during storage period, the biochemi- cal and physical indexes of packaged rice in Northeast China were analyzed. The results indicated that the pesticide residue, heavy metal, methyl benzene residual and aflatoxin B1 were not detected in packaged rice during storage period. The fatty acid value and re- ducing sugar were increased significantly with storage time. Although the fatty acid value tended to increase, but was lower than that specified in national standards. The viscosity was decreased slowly with storage time.
