摘要
以茭白壳为原料,采用化学法制备可溶性膳食纤维和不溶性膳食纤维。正交实验结果表明,可溶性膳食纤维提取的最佳工艺条件为:pH2.0、温度80℃、时间90min。不溶性膳食纤维提取的最佳工艺条件为:碱解时NaOH浓度1.0mol/L、料液比1:20(g/mL)、温度60℃、时间60min;酸解时pH3.0、温度60℃、时间120min,其溶胀性为4.34mL/g,持水力为8.11g/g。
The dietary fiber was extracted from the orthogonal experiment result showed that the optima shell of zizania aquatica by using chemical method. The conditions for extraction of soluble dietary fiber were pH2.0, temperature 80℃, time 90min.The optimal conditions for extraction of insoluble dietary fiber were: NaOH dosage 1.0tool/L, proportionment 1:20 (g/mL), temperature 60℃, time 60min when alkaline hydrolysis; pH3.0, temperature 60%, time 120min when acidolysis.The expansion capacity and water holding capacity are 4.34mL/g and 8.11 g/g.
