摘要 为了对野生植物性食物—沙米进行开发利用,对其蛋白质、氨基酸等成分进行了测定分析。结果表明:沙米蛋白质、粗纤维、脂肪、灰分、钙元素含量较高;人体必需氨基酸含量高达8.50%,其中缬氨酸、赖氨酸、亮氨酸及婴儿必需氨基酸-精氨酸含量较大幅度高于主要粮食作物和一些保健作物;沙米蛋白质氨基酸模式与人体蛋白质氨基酸模式很接近。结论:沙米营养价值高,适合婴儿和特种人群食用,具有较好的开发利用前景。 To make good use of the seed of Agriophyllum squarrosum, protein, amino acids and other nutrition compositions were detected.The results showed that the seed contained much higher protein, fiber, crude fat and calcium.The essential amino acid was 8.50%, especially the content of VAL, LEU, LYS and ARG were higher than main grain crops and some health crops.The model of amino acid was similar to the human being' s.In a word,the seed of Agriophyllum squarrosum was high nutrition food,and it was a good diet for baby and special people,so the value of exploitation and utilization was very high.
