摘要
通过分析粽子企业当前存在的食品安全管理体系的运行问题,提出了粽子企业建立HACCP计划的方法和操作性前提方案的框架,从而建立粽子企业食品安全管理体系的框架。
The problems existed in food safety management system in quick-frozen glutinuous rice dumpling enterprises were analysed. The framework to establish HACCP plan in quick-frozen rice dumpling enterprises was put forward to construct food safety management system to ensure food safety.
