摘要
目的通过开展山西省超市食品从业人员对食品安全知识的认知、态度和行为调查,了解影响食品安全相关工作行为的影响因素,以进一步提高山西省食品安全工作的有效性。方法通过问卷对山西省37家超市的344名食品人业人员进行调查,利用SPSS 11.0统计软件进行数据统计分析。结果调查对象整体文化程度较低;食品卫生知识掌握情况一般;大部分调查对象持有上岗资格证并认为食品安全很重要但是缺乏有效的培训;女性和单位培训对改善食品加工从业人员的食品安全相关行为有促进作用。结论相关单位应该加强对从业人员的食品安全培训,提高职业水平,保障消费者合法权益和健康。
Objective To investigate the food safety knowledge, attitudes and behavior and its influence factors in supermarket food workers in Shanxi Province, and to further improve the effectiveness of the food safety management. Methods A questionnaire survey was carried out on 344 food workers from 37 supermarkets in Shanxi Province, and statistical analysis was performed via the statistical software SPSS 11.0. Results The employees investigated were in low educational level They lacked adequate food hygiene knowledge. The majority of the workers were certificate holders who regarded food safety as important but lacked effective training. The employment of women and effective training were helpful to improve food safety. Conculsion Food safety training on employees and professional standards should be strengthened. The legitimate rights and health of consumers should be protected.
